A HOGBOX is a stainless steel and aluminium cooking box. It is a commercial version of a ‘Lacajachina’ or ‘Cuban Microwave’ which are becoming increasingly popular in the U.S.A and throughout Central and South America and has been designed and built for slow-cooking meats and vegetables. Charcoal/wood is placed into the recessed lid and burned. Typically, the temperatures are kept fairly low, so that the food cooks LOW N SLOW and the end result is crispy on the outside, and tender and moist on the inside. The enclosed environment and the indirect heat of the HOGBOX helps to keep food moist while it cooks, and the size of the box is large enough to accommodate anything from a full pig too a mixed spread of any cut of meats. You can cook pork hams and butts, beef briskets/ribs, delicious beer can chicken, lamb and vegetables. The top of the HOGBOX even has a removable BBQ grill and hotplate which is great for searing any steaks, burgers, sausages and wings etc. It can also double up as a Firepit keeping the party going with everyone huddling round it long into the night.
